Caldine is a Goan-inspired dish from the West Coast of India. This creamy coconut gravy with an infusion of toasted coriander, cumin, Tellicherry peppercorns, Kashmiri chilies and the finest turmeric holds the most special place in my heart. For a memorable culinary celebration with family and friends add 4 pre-cooked lobsters and scallops and simmer for 10 minutes and enjoy!

HOW TO USE:
Sear Chicken, Seafood, Vegetables in 3 tbsps ghee until cooked. Simply add the sauce, *stir well, simmer on low for 10 minutes, add salt to taste.*This sauce is extra thick and packed with flavor. If you would like to thin it out, use either 1 cup of lite coconut milk or try chicken, seafood or vegetable stock. Serve hot with Basmati rice and buttered naan.

Makhani
is the Indian word for ‘with Butter’. This small-batch, handcrafted, luscious, buttery-tomato cream sauce is infused with an aromatic and authentic North Indian Mughlai spice blend. Toasted and freshly ground cardamom, cumin, coriander, peppercorns and a touch of heavy cream add just the right touch of added richness.

Makhani pairs perfectly with chicken but it also makes for a slam-dunk spicy Chickpea Masala, Paneer Masala, or my husband’s favorite, melt-in-your-mouth boneless lamb over steaming hot Basmati Rice and ghee-slathered garlic naans.

HOW TO USE:

Saag
is the Indian word for leafy greens. Hailing from the North Indian state of Punjab, this hearty, vegetarian sauce is loaded with spinach, broccoli, aromatic and healing spices like Fenugreek and Garam Masala with a touch of cream . It’s often the go-to dish for the farmer because its packed with nutrients to sustain them for a long and hard day’s work in the fields.

You can put a 100% vegetarian spin on this with cauliflower, chickpeas, butternut squash, sweet potatoes and paneer (Indian cheese) or add tender morsels of boneless lamb to elevate this thick gravy to another level of de-lish!

Korma (Shahi Korma, or Royal Korma) dates to the 16th century in the kitchens of the Mughal Era in India. This Korma is crafted with an aromatic blend of freshly ground spices, rich tomato gravy simmered in cashew paste, heavy cream and premium ghee elevating this Korma to one fit for royalty and your curated pantry.

HOW TO USE:
Heat 4 tbsps ghee in a large skillet over medium heat. Toss in baby golden potatoes and fry until golden brown. Set aside. Add chunks of boneless lamb or chicken breasts, and sear on each side for 1 minute. Add the sauce and the potatoes, simmer on low heat, covered for 10 minutes until the lamb or chicken is cooked thoroughly. Garnish with chopped cilantro, red onions, and cashews. Serve over Basmati Rice with steamed baby green peas. Don’t forget that garlic buttered naan to soak in all the luscious gravy.

Note:
Too spicy? Add in a ¼ cup of yogurt or lite cream to cut the heat, stir well.
